Ingredients:

For the Noodles:

• 300g rice noodles or spaghetti

• 1 medium carrot, shredded

• 2 scallions, sliced

• 2 tbsp crushed peanuts

• Fresh cilantro leaves, for garnish

For the Peanut Sauce:

• 80g creamy peanut butter

• 2 tbsp soy sauce

• 1 tbsp rice vinegar or lime juice

• 1 tbsp sesame oil

• 1 tbsp honey or maple syrup

• 1 garlic clove, minced

• 1 tsp grated fresh ginger

• ½ tsp red chili flakes (optional, for spice)

• 60–90ml warm water (to thin sauce as needed)

Instructions:

  1. Cook the Noodles
    Bring a large pot of salted water to a boil. Cook noodles according to package instructions until tender. Drain and set aside.
  2. Make the Peanut Sauce
    In a bowl, whisk together peanut butter, soy sauce, vinegar or lime juice, sesame oil, honey, garlic, ginger, and chili flakes. Gradually add warm water until the sauce reaches a smooth, pourable consistency.
  3. Combine and Serve
    Toss the cooked noodles in the peanut sauce until well coated. Spoon into bowls and top with shredded carrots, crushed peanuts, scallions, and cilantro. Serve immediately.
