Ingredients:
For the Noodles:
• 300g rice noodles or spaghetti
• 1 medium carrot, shredded
• 2 scallions, sliced
• 2 tbsp crushed peanuts
• Fresh cilantro leaves, for garnish
For the Peanut Sauce:
• 80g creamy peanut butter
• 2 tbsp soy sauce
• 1 tbsp rice vinegar or lime juice
• 1 tbsp sesame oil
• 1 tbsp honey or maple syrup
• 1 garlic clove, minced
• 1 tsp grated fresh ginger
• ½ tsp red chili flakes (optional, for spice)
• 60–90ml warm water (to thin sauce as needed)

Instructions:
- Cook the Noodles
Bring a large pot of salted water to a boil. Cook noodles according to package instructions until tender. Drain and set aside. - Make the Peanut Sauce
In a bowl, whisk together peanut butter, soy sauce, vinegar or lime juice, sesame oil, honey, garlic, ginger, and chili flakes. Gradually add warm water until the sauce reaches a smooth, pourable consistency. - Combine and Serve
