Ingredients:
- 1 serving of Spaghetti
- 1 medium Tomato
- 3–4 leaves of Fresh Basil
- 1 small Onion
- 1 small Carrot
Instructions:
- Cook the Spaghetti
Start by boiling a pot of water. Once boiling, add a pinch of salt and the spaghetti. Cook according to the package instructions until al dente, then drain and set aside. - Prep the Vegetables
Finely dice the onion and carrot. - Sweat the Onion
In a large pan over medium heat, add a small amount of water (instead of oil) to sweat the onions. Cook until translucent. - Soften the Carrot
Add the diced carrot to the pan and cook until it begins to soften. - Make the Sauce
Chop the tomato into small cubes and add it to the pan. Stir well and let it cook down into a chunky sauce, releasing its juices. - Add Basil
Tear the basil leaves into small pieces and stir them into the sauce. Let the basil infuse its aroma. - Combine with Pasta
Add the cooked spaghetti to the pan and toss to coat with the sauce. Heat through. - Serve
Plate and garnish with a few extra fresh basil leaves.
