Ingredients:

  • 1 serving of Spaghetti
  • 1 medium Tomato
  • 3–4 leaves of Fresh Basil
  • 1 small Onion
  • 1 small Carrot

Instructions:

  1. Cook the Spaghetti
    Start by boiling a pot of water. Once boiling, add a pinch of salt and the spaghetti. Cook according to the package instructions until al dente, then drain and set aside.
  2. Prep the Vegetables
    Finely dice the onion and carrot.
  3. Sweat the Onion
    In a large pan over medium heat, add a small amount of water (instead of oil) to sweat the onions. Cook until translucent.
  4. Soften the Carrot
    Add the diced carrot to the pan and cook until it begins to soften.
  5. Make the Sauce
    Chop the tomato into small cubes and add it to the pan. Stir well and let it cook down into a chunky sauce, releasing its juices.
  6. Add Basil
    Tear the basil leaves into small pieces and stir them into the sauce. Let the basil infuse its aroma.
  7. Combine with Pasta
    Add the cooked spaghetti to the pan and toss to coat with the sauce. Heat through.
  8. Serve
    Plate and garnish with a few extra fresh basil leaves.
