Ingredients:

For the Meatloaf:

• 500g ground beef

• 1 small onion, finely chopped

• 2 garlic cloves, minced

• 1 egg

• 60g breadcrumbs

• 2 tbsp ketchup

• 1 tbsp Worcestershire sauce

• 1 tsp dried thyme

• Salt and pepper to taste

For the Mashed Potatoes:

• 800g potatoes, peeled and chopped

• 60ml milk

• 30g butter

• Salt to taste

• Freshly ground black pepper

Instructions:

  1. Preheat the Oven
    Preheat your oven to 180°C (350°F).
  2. Prepare the Meatloaf Mixture
    In a large bowl, combine the ground beef, onion, garlic, egg, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined but do not overwork the meat.
  3. Shape and Bake
    Transfer the mixture into a loaf shape on a lined baking tray or press it into a loaf pan. Bake for 45–50 minutes, or until cooked through and the top is browned.
  4. Boil the Potatoes
    While the meatloaf is baking, boil the chopped potatoes in salted water until tender, about 15–20 minutes.
  5. Mash the Potatoes
    Drain the potatoes and mash them with the butter and milk. Season with salt and pepper to taste. Add more milk if a creamier texture is desired.
  6. Rest the Meatloaf
    Once done, let the meatloaf rest for 5–10 minutes before slicing. This helps retain moisture.
  7. Serve
    Plate slices of meatloaf alongside a generous serving of mashed potatoes. Optionally, drizzle with gravy or ketchup.
