Ingredients:
For the Meatloaf:

• 1 small onion, finely chopped
• 2 garlic cloves, minced

• 60g breadcrumbs

• 800g potatoes, peeled and chopped
• 60ml milk
• 30g butter

Instructions:
- Preheat the Oven
Preheat your oven to 180°C (350°F). - Prepare the Meatloaf Mixture
In a large bowl, combine the ground beef, onion, garlic, egg, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined but do not overwork the meat. - Shape and Bake
Transfer the mixture into a loaf shape on a lined baking tray or press it into a loaf pan. Bake for 45–50 minutes, or until cooked through and the top is browned. - Boil the Potatoes
While the meatloaf is baking, boil the chopped potatoes in salted water until tender, about 15–20 minutes. - Mash the Potatoes
Drain the potatoes and mash them with the butter and milk. Season with salt and pepper to taste. Add more milk if a creamier texture is desired. - Rest the Meatloaf
Once done, let the meatloaf rest for 5–10 minutes before slicing. This helps retain moisture. - Serve
Plate slices of meatloaf alongside a generous serving of mashed potatoes. Optionally, drizzle with gravy or ketchup.
