Ingredients:
For the Fried Rice:
• 300g cooked pork (diced or shredded)
• 3 cups cooked rice (preferably day-old, jasmine or long grain)
• 2 eggs, lightly beaten
• 1 onion, diced
• 1 carrot, diced
• 100g peas (frozen or fresh)
• 3 garlic cloves, minced
• 3 tbsp soy sauce (plus extra for serving)
• 1 tbsp oyster sauce (optional)
• 2 tbsp vegetable oil
• 1 tsp sesame oil
• Salt and black pepper, to taste
For Garnish:
• 2 scallions, chopped
• 1 tbsp toasted sesame seeds

Instructions:
- Prepare the Ingredients
Make sure rice is cold and separated into grains. Dice pork, vegetables, and chop scallions for garnish. - Cook the Eggs and Vegetables
Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Scramble the eggs until just set, then remove. Add remaining vegetable oil and sauté onion, carrot, peas, and garlic until softened, about 4–5 minutes. - Stir-Fry the Rice and Pork
Add rice and pork to the skillet. Stir-fry for 5–6 minutes, breaking up clumps of rice. Add soy sauce, oyster sauce (if using), sesame oil, and scrambled eggs. Stir until well combined and heated through. - Serve
Spoon fried rice into bowls. Top with chopped scallions and sesame seeds. Serve with soy sauce on the side.
