Bangers and Mash

A traditional British comfort food dish featuring savory sausages served over creamy mashed potatoes, topped with rich onion gravy, and accompanied by a side of tender green peas.

Ingredients:

For the Mash:

• 800g potatoes, peeled and chopped

• 60ml milk

• 30g butter

• Salt and black pepper, to taste

For the Sausages:

• 8 pork sausages (traditional “bangers” or your preferred variety)

• 1 tsp olive oil

For the Onion Gravy:

• 2 tbsp butter

• 2 onions, thinly sliced

• 1 tbsp all-purpose flour

• 500ml beef stock

• 1 tsp Worcestershire sauce

• Salt and black pepper, to taste

For Serving:

• 200g green peas (fresh or frozen)

Instructions:

  1. Cook the Potatoes
    Boil the potatoes in salted water until tender, about 15–20 minutes. Drain, mash with butter and milk, and season with salt and pepper. Keep warm.
  2. Cook the Sausages
    Heat olive oil in a skillet over medium heat. Add sausages and cook until browned and cooked through, about 12–15 minutes, turning occasionally.
  3. Make the Onion Gravy
    In the same pan, melt butter and add sliced onions. Cook until caramelized, about 10 minutes. Stir in flour and cook for 1 minute, then gradually whisk in beef stock and Worcestershire sauce. Simmer until thickened, about 5 minutes. Season to taste.
  4. Cook the Peas
    Boil peas in salted water for 3–4 minutes until tender, then drain.
  5. Assemble and Serve
    Place a generous scoop of mashed potatoes on a plate. Arrange sausages on top and spoon onion gravy generously over them. Add peas on the side and serve hot.
