Ingredients:
For the Mash:
• 800g potatoes, peeled and chopped
• 60ml milk
• 30g butter
• Salt and black pepper, to taste
For the Sausages:
• 8 pork sausages (traditional “bangers” or your preferred variety)
• 1 tsp olive oil
For the Onion Gravy:
• 2 tbsp butter
• 2 onions, thinly sliced
• 1 tbsp all-purpose flour
• 500ml beef stock
• 1 tsp Worcestershire sauce
• Salt and black pepper, to taste
For Serving:
• 200g green peas (fresh or frozen)

Instructions:
- Cook the Potatoes
Boil the potatoes in salted water until tender, about 15–20 minutes. Drain, mash with butter and milk, and season with salt and pepper. Keep warm. - Cook the Sausages
Heat olive oil in a skillet over medium heat. Add sausages and cook until browned and cooked through, about 12–15 minutes, turning occasionally. - Make the Onion Gravy
In the same pan, melt butter and add sliced onions. Cook until caramelized, about 10 minutes. Stir in flour and cook for 1 minute, then gradually whisk in beef stock and Worcestershire sauce. Simmer until thickened, about 5 minutes. Season to taste. - Cook the Peas
Boil peas in salted water for 3–4 minutes until tender, then drain. - Assemble and Serve
Place a generous scoop of mashed potatoes on a plate. Arrange sausages on top and spoon onion gravy generously over them. Add peas on the side and serve hot.
